A speed/machine shop should be able to do it. Basiclly, a machine shop that only deals with performace applications, or a speed shop with machine shop capabilites. These are hard to find, and most will charge an arm and a leg. But there are a few good ones out there, such as "LJ's Speed and Machine" in Napa, California.
Look in your local yellow pages for refrences. Most shops that can correctly balance a rotating assembly should also be able to profile a cam correctly.
