I'm right in the middle of my oil life cycle (3k miles out of 5-7k on Mobil 1 synthetic) and I have 3 track days coming up at the end of this month. Should I change it first so I have new oil for the track, or wait till afterward?
I guess this same question applies to brake fluid, although I plan to change that beforehand anyway.

For motor oil I wouldn't bother changing it out. Just make sure that you're topping it off after each session. Then change it out afterward since there should be tons of life left in the oil. As for brake fluid I'd change that out every other track session esp if it's relatively open.
Every other session? Isn't that a bit excessive? Around here, you'll get 4 or 5 track sessions a day!

Yeah I flush my fluid about once every 6 months, which usually includes 2-3 track weekends. I might bleed them in between, but I've never had fluid issues with that routine. Oil probably isnt an issue unless it looks pretty dirty, obiviously keep an eye on the leve.
