If I take off my heat shield and heat wrap my headers and then put back on my heat shield wouldn't that help my intake temp to go down some?

yes it will but that seems like an awefull lot of work, especially when you are going to want to swap those out for a header, or even turbo maybe, your best bet for now is to get a CAI and heat wrap that, and make sure you get that filter out of the engine bay
