Part of it has to do with the integrity of the adapter, and the forces imposed on it. do you really want all of your engine's power/braking to go through the hub, then the adapter, and finally your wheels?
Then, you have the fact the adapter acts as a spacer. generally, (proper) wheels are designed for the hub face to be in a specific spot, so the wheel has some engineering to ensure the wheel is enforced to accept the weight. adding spacers affects this, as the wheel is receiving a higher weight ratio (think leverage).
for a normal daily driver, you should be okay. if you take it to a track, you want something a little more secure (5-lug conversion, or 4-lug wheels).
If any of this is wrong, feel free to correct me. I am not an engineer, and I am more or less quoting what I (think) I remember from talking to an engineer a long time ago (years) about the subject. there was more to it than this, but these were the main bullet points I remember.
again, this is assuming a real, non-Chinese knock off, adapter.
