what does it mean when you get a 3 angle valve job done?

I'm no headwork guru, but I'm pretty sure it has to do w/ the fact that the head, itself, is ground at 3 different angles, where the valve would seat against the valve port (hole in the head for the valve). The number of angles affects how air/fuel & exhaust flow through the head into the combustion chamber. If I'm wrong, I tried...

The valve seat, and valve itself are ground to three different angles. This makes air and exhaust gas flow better over the valve.

I always thought it had to do with the seal created between the valve and seat when the valves are closed, but I'm a dumbass. . .what do I know?
