temp gauge spikes

I have replaced the sending unit twice, changed the dash gauge, Checked and cleaned all the grounds in my 95 . Fan cycles normally but gauge reads off the scale after only a few minutes. Also changed thermostats. The car is actually running at about 180. This is making me crazy. Any ideas?
