It's stainless steel so it can't be the material it's made out of, is it maybe the bends, they might not be smooth bends to slow down flow. Is there anything else I'm missing? I'd just like to know specific things that separate a good catback from a bad catback, I just feel like when you buy a Greddy exhaust at least $100 from the price is the name.

It might not be bad in the terms of a new exhaust, but build quality, sound, life expectancy have alot to do with higher end models.
Sometimes these smaller companies just copy cat the design a company spent X amount researching. Either that or maybe the company uses the same muffler and attaches it to application specific piping.
Some of it is the name but normally that name can somewhat justify it's price.
