What should my gauges read?

I know this is a really newb question but here goes: I bought my lude a few weeks ago and it has two aftermarket gauges on the left in front of/above the driver-side window.
One is oil pressure and one is water temperature.

I assume the oil one should give me a hint as to when I should check it ie: the pressure is higher or lower than it has been in the past. What should it optimally read when I'm driving??

The water temp gauge I'm confused about too. It just confirms that the engine temperature is either cold, warmed up or hot. What water is it measuring the temperature of? the rad fluid?

Obviously if I had installed these myself I would know what they were for but I did not and I've never spoken to the guy who installed them.

Oil pressure can change with load. If you had really low oil pressure while driving, something is wrong or going to be wrong.

If you stomp on the gas the pressure would rise and as you coast, it does go down.

The temp gauge, if it just confirms those ranges, then it's as useless as the stock one. Water temps generally should be around 200ish degrees F (give or take climate and if you're idling).
