Thank you for your impressions about those tires. I asked a compagny specialized in selling tires and here is what they said:

Traction: S-03 and T1-S are similar
Handling: S-03 and T1-S are similar
Hydroplaning resistance: S-03 is better
treadwear: S-03 will last a little longer

He also said S-03 had a special design to keep good wet traction while the tire wears. I will try the S-03 because, for me, tires are as important as shoes. And, like Vin Diesel will say in "The Fast and The Furious 2" :

"When you drive a Prelude in twisties, the only thing between you and death is your tires"
S03 tread life is 220
T1S tread life is 280

But remember, manufacturers have their own way of rating tread wear.

the potenza s-03 is an amazing tire, especially for it's price. i'd certainly choose it over the t1-s, and the s-03 handles so well in the rain to...

Another vote for S-03s here. I have them in 215-45-17 on my car for a while now. They are great in the dry and have AMAZING grip in the wet. Very quiet tires to boot.

I've never driven on the T-1s's though...

I've driven on both in a 215/45R17.
For daily driving the Toyo T1-S cannot be beat. The ride is way more comfortable. True you loose a little bit in razor sharp turn-in, but we are on the street. What you gain in the T1-S is the overall balance for street driving. It doesn't wander, pull the steering wheel out of your hands because it found a rut in the road. The T1-S is an amazing street tire. I've tried Falkens, Kumhos, Yokos, Michelins, previous gen Toyo T1+, among others. Michelin Pilot Sports are the same as S03.

If you want a civil tire, go T1-S.
