I wouldn't worry to much about it. It looks as though that engine has been sitting along time as the carbon has to be very dry to jut fall of and crumble like that. Carbon build up like that is normal with higher mileage engine, especially with h22's (well any VTEC engine really) as they burn oil from the get go more than most. I have rebuilt multiple used h22's and everytime i do open one up there is usually a nice built up layer or hard carbon material. Just clean it off and contiunue on, it wont do any damage, although excessive amounts are usually caused by rings that are tired and allow leakage behind them.
Another useful tip is when cleaning this kind of debris off, put the block on stand and flip it up side down before you do anything, as you dont want particulate getting trapped in between the cylinder wall and piston as it may damage the sleeve(scoring, scaring, nicks and such). This allows thing to fall out of block rather than into it.
If you are going to remove the pistons all together then thats different, but if not the above mentioned way works well.
