Blown head gasket?

My 2000 type sh has been overheating very often lately. When I check the coolant, it is basically bone dry after about a half hour of driving. There are no leaks and I just replaced the water pump and the heater blows hot so its not the thermostat. The only thing I can think of is the head gasket even though I never saw white smoke and my oil is fine. I literally went through like two gallons of coolant in the last three days until i just started putting water in it for now.
I'll be running a compression test here in the next day or two and try not to drive it much til i figure it out.
Anyone got any ideas?

By the way, i passed 5000 rpms earlier just to see how it would act and my engine just started making gargling noises and decelerated. I thought I blew my engine for a sec but i threw her in neutral and coasted for a few seconds and she drove fine after that.

Update: made 149.7whp with the same setup but new plugs, plug wires, type s pistons, new bearings, and a colder/more humid day...wtf yo

No expert on the motor yet but it does sound like a head gasket. I would assume if your not getting white smoke out the back for the amount that your losing then its not being burned inside the engine and out the headers. Your symptoms point to a possible head gasket but dont be surprised if you tear it apart and start noticing other problems.

White smoke = something forgot but its the headgasket lol! Get it replaced soon or your engine will die

I am in the process of replacing my head gasket as well. I had similar symptoms but maybe not quite as bad. My suspicion is that when you go to check your compression, something similar to what happened to me will happen to you. Here is my thread on my head gasket issues:
