1) With an amp that small, you should probably stick to one sub. IMO 2 subs are overkill anyway.
2) If you spend that $200 on one sub, you can get a fairly nice, good quality one. If you split that same money into 2 subs, you will be limiting yourself to cheaper much muddier sounding/ lower quality subs.
3) I can't answer your question about what size wire you should use until I know how many subs you are going to use and how you will be wiring them.
My recommendation with that amp would be to use a single 12" 4 ohm sub, and run the amp bridged. The RMS output of the amp is "500 watts" bridged, but it's not a CEA compliant amp so that number is bullsh!t, and the real output is more than likely significantly lower than that. That said, a sub in the 400-500 watt RMS power handling range is probably still your best bet, but you could still probably run a 350 watt RMS sub off of it without issues.
You're not totally sunk, I've still got an old "crunch" amp that I used for years without issue sitting in my garage. They are made by Rockford and are decent for the price, just don't believe their power output numbers or attempt to drive anything other than a sub with them. Their SQ isn't that great as they can create some nasty distortion that smaller speakers can pick up, but it's much less of an issue with a sub.

just recently got a rockford fosgate P3 subwoofer, love it. i also got a rockford fosgate p1000-1bd amp connected at 2 ohms. and i got a Alpine CDA117.
i got a MTX amp connected to my alpine 6X9s at the rear and to my alpine door speakers
