First of all, don't feel bad. As a matter of fact, I don't think any of your choices are bad. It just takes a little more effort to get a good turbo setup working.
All the welding stuff is unfortunately required for any turbo setup. I'm not aware of any off the shelf kit that will install without some custom welding. The kit you bought looks pretty good actually, it's just a little short on some final pieces. As a matter of fact, a t03/t04e hybrid is a fantastic turbo for most Hondas.
One thing that's not clear to me are your power goals or PSI goals. Those are really important to specify up front before you piece together your turbo kit.
BTW, the Mahles don't seem to have a 8.5:1 piston. I do see a 9:1 piston; maybe that's what you meant?
You mentioned using an AEM EMS. Personally, I love the AEM, but it's very pricey. You can get really good performance from a P28 running Crome for very cheap though. You will need an OBD1 harness to run it though.
At this point you need to get a good engine builder, preferably someone who can do the welding for you too. There are a couple great shops out there, but I have no idea what is close to Chicago. You will have to do some searching to get something close by.
